PF Kitchen: Candy Cane Truffles
Ingredients:
¾ cup walnuts
¾ cup almonds
8 dates, softened in hot water for 20 minutes and then pitted
2 tbsp ground flaxseed
½ cup cocoa powder
2 tsp vanilla extract
1 teaspoon peppermint extract
½ tsp sea salt
2 tbsp water
4 regular sized candy canes, chopped to a powder
Directions
Place all ingredients in a food processor until they start to stick together
Pour the candy cane powder on to a plate
Grad a small piece of the mixture and roll it in your hands until it forms a ball
Roll the mixture on the plate with the candy cane powder
Slide the truffle on to a skewer
*Makes approximately 24 truffles
