PF Kitchen: Pumpkin Baked Oatmeal Muffin Cups


Edwardsville & Glen Carbon Nutrition Coach



  • 2 Cups old-fashioned oats

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 tbsp pumpkin pie spice mix

    • OR use 1 tsp cinnamon, ¾ tsp ground ginger, ½ tsp ground nutmeg ½ tsp allspice, and ½ tsp ground cloves)

  • 1 cup milk (any variety)

  • ¾ cup plain canned pumpkin

  • 1 egg

  • ¼ cup honey

  • Optional:

    • White chocolate chips, regular chocolate chips, raisins, chopped walnuts



  1. Preheat oven to 350 degrees

  2. Grease muffin tin or line with baking cups

  3. Place all ingredients in a bowl and mix well

  4. Fill each muffin cup almost to the top

  5. Bake for 20-25 min.

  6. Allow muffins to cool and serve
