PF Kitchen: Chocolate Avocado Pudding
Ingredients
-1 avocado
-6-8 dates
-3 tbsp cacao/cocoa powder
-½ tsp vanilla
-water as needed (I usually add ⅓ cup)
Directions:
Cut avocado in half. Using a knife, slice it into squares and then scoop out with a spoon.
In a food processor, combine avocado, pitted dates, and the rest of the ingredients.
Process for a about 1 minute.
Check consistency and scrape the sides. Add more water if needed and process for another minute.
Serving by itself or sprinkled with shredded coconut, sliced strawberries and almonds.
