PF Kitchen: Candy Cane Truffles

Ingredients:

  • ¾ cup walnuts
  • ¾ cup almonds
  • 8 dates, softened in hot water for 20 minutes and then pitted
  • 2 tbsp ground flaxseed
  • ½ cup cocoa powder
  • 2 tsp vanilla extract
  • 1 teaspoon peppermint extract
  • ½ tsp sea salt
  • 2 tbsp water
  • 4 regular sized candy canes, chopped to a powder

Directions

  1. Place all ingredients in a food processor until they start to stick together
  2. Pour the candy cane powder on to a plate
  3. Grad a small piece of the mixture and roll it in your hands until it forms a ball
  4. Roll the mixture on the plate with the candy cane powder
  5. Slide the truffle on to a skewer

*Makes approximately 24 truffles
