PF Kitchen: Chocolate Avocado Pudding

Ingredients

  • 1 avocado
  • 6-8 dates
  • 3 tbsp cacao/cocoa powder
  • ½ tsp vanilla
  • water as needed (I usually add ⅓ cup)

Directions:

  1. Cut avocado in half. Using a knife, slice it into squares and then scoop out with a spoon.
  2. In a food processor, combine avocado, pitted dates, and the rest of the ingredients.
  3. Process for a about 1 minute.
  4. Check consistency and scrape the sides. Add more water if needed and process for another minute.
  5. Serving by itself or sprinkled with shredded coconut, sliced strawberries and almonds.
